Automatic Roast Duck Oven
全自动烤鸭炉 / 烧鹅炉
The partner machine. Dried skin goes straight from the cabinet into a programmed roast.
Drying Equipment
风干晾鸭柜
Circulating low-temperature air pulls surface moisture off duck and goose skin before it reaches the oven — the quiet step that decides whether the finished skin crackles or goes soft.
Ask anyone who runs a Cantonese BBQ shop what makes the skin crisp and the answer will not start with the oven. It starts the night before, with a bird hanging in moving air until the surface is dry to the touch. Wet skin going into a hot oven steams. Steam softens the surface, the sugars never caramelise properly, and you end up with pale, chewy skin no matter how well the oven is built.
The traditional way is a rail in a cold room with a fan pointed at it. It works when the weather cooperates and fails quietly when it does not — humid weeks, rainy seasons, a kitchen that is already warm by six in the morning. Birds at the ends of the rail dry faster than the ones in the middle, so the batch is never uniform.
A drying cabinet fixes both problems. Air is moved past every bird at the same rate, and the moisture it picks up is vented out instead of lingering in the room. The temperature stays low, so the meat is never cooking or spoiling while it dries. Load it in the evening, set the timer, and the batch is ready when your first roast goes in.
It is the least glamorous machine we build and one of the most consequential. Shops that buy an oven first usually come back for the cabinet once they have chased an inconsistent crackle for a few months.
Drying is a preparation step, not a cooking one. Three things have to be right at the same time, and the cabinet is what keeps them steady.
01
Still air saturates around the bird and drying stalls. Continuous circulation keeps carrying moisture away from the surface.
02
The exhaust vents humid air out of the cabinet. Without it you are just moving the same damp air around in a box.
03
Too warm and the surface cooks instead of drying. The cabinet holds a low, safe working temperature for hours at a time.
04
Every bird sits in the same airflow, so the whole batch reaches the same dryness together instead of in stages.

Built for Service
01
The variable that ruined the batch most often is now controlled — skin condition going into the oven.
02
Humid seasons and warm kitchens no longer change the result from one week to the next.
03
Washable, corrosion-resistant interior that copes with raw poultry every single day.
04
Cabinet and oven capacity are matched, so a dried batch equals a full oven load with no leftovers.
A drying cabinet exists to feed an oven. Most buyers pair it with the machine that does the roasting — and many add a second roasting line once the drying step is under control.

全自动烤猪炉
Caterers who dry duck through the week and roast whole hog at weekends run both.
腊肉烘干机
If curing moves from a side task to daily production, this is the machine built for it.
Questions About This Machine
You can, and plenty of shops do. The problem is control: still air dries unevenly, birds near the fan dry faster than those in the corner, and in humid weather the surface never really dries at all. A cabinet moves air past every bird at the same rate and vents the moisture out.
It depends on your climate, bird size and how much airflow you run. Rather than quote a single number, we give you starting parameters in the training material and help you calibrate them to your own kitchen — humidity is the variable that changes most between countries.
It follows throughput. One door suits a shop roasting a modest daily batch; multiple doors let you run staggered loads so one batch finishes drying while the next goes in. Tell us your daily bird count and we will size it.
Yes, within its temperature range. Shops use it for sausage and cured belly at low temperature, though if curing is a daily production job rather than a side task, the cured meat dryer with its tray racks is the better machine.
Standard builds are 220V or 380V at 50 or 60Hz, configured per destination. The load is modest compared with a roasting oven, so it rarely causes supply problems.
